joyeux noel!!!

i have spent the last several days baking, baking, & yet more baking. yummy hazelnut biscotti, deep chocolate cookies with mint chocolate swirls and best of all the sinfully delicious chocolate truffles. now they are all packed up and ready to give. so, it's on to the cakes for xmas dinner.

as my gift to all of you loyal followers (wish i could bake you all something yummy myself) my favorite truffle recipe.
10 oz. good quality bittersweet chocolate ( i use ghirardelli)
1/2 cup heavy cream
1/2 cup creme fraiche
4 tbl. butter
confectioners sugar

chop chocolate & and place in bowl. in a saucepan bring cream, creme fraiche & butter to a boil. pour over chocolate and gently stir before letting melt. set bowl in ice bath. when thickened & set scoop out ( i use a small baller ) and place on parchment paper. refrigerate until firm.
roll lightly in powdered sugar and then cocoa. share and enjoy!!
