Around our house Meringue's are a favorite, so since my daughter turned 10 this week I whipped up a batch as a special treat- that was on top of the Velvet Butter cupcakes with Sour Cream Ganache frosting for her class, Bernachon Palet D'or Gateau for our family celebration and Chocolate Oblivion Truffle Torte for a friends holiday party.  It was such a chilly, rainy weekend so it was a perfect time to stay at home baking and enjoy some much needed family time.



4 egg whites
2 1/4 cups confectioner's sugar


preheat oven to 200 degree's
butter and flour 2 cookie sheets

1. In an electric mixer whip egg whites at medium speed until lightly stiff.  

2. Sprinkle in sugar gradually while still mixing.  

3. When the mixture becomes stiff and shiny stop mixing and transfer to large pastry bag fitted with large star tip.

4. Pipe onto cookie sheets.

Put in oven, placing a wooden spoon in door to keep slightly ajar.  
Bake for 3 hours until dry.
allow to cool
